Banana Nut Cookies

Ingredients

-1/2 cup salted butter, softened

-1 cup light brown sugar

-1 egg

-1-2 overripe bananas

-1 tsp baking soda

-2 cups flour

-1 pinch of salt

-1 tsp cinnamon

-1 tsp nutmeg

-1 cup of chopped walnuts

Recipe Instructions:

-Preheat oven to 350 degrees.

-Beat together 1/2 cup butter and 1 cup light brown sugar.

-Add 1 egg to mixture and beat until fluffy.

-In a separate bowl, mix together 1-2 crushed bananas with 1 tsp baking soda and let sit for 2 mins.

-Mix banana mixture into butter mixture.

-In another separate bowl, mix together 2 cups flour, 1 pinch of salt, 1 tsp nutmeg, and 1 tsp cinnamon.

-Combine wet and dry mixture.

-Fold in 1 cup of chopped walnuts.

-Scoop cookie batter onto a pan lined with parchment paper.

-Bake cookies at 350 degrees for 11-13 mins.

Hushpuppies

Ingredients:

-1 cup cornmeal

-1/4 cup flour

-1/2 tsp baking soda

-1/2 tsp salt

-1 egg

-3/4 cup almond milk

-1 small onion

-Vegetable oil for frying

Recipe Instructions:

-Combine 1 cup cornmeal, 1/4 cup flour, 1/2 tsp baking soda, and 1/2 tsp salt.

-Whisk together 1 egg, 3/4 cup almond flour, and 1 small onion.

-Stir together wet and dry ingredients until combined.

-Fry spoonfuls of the mixture in vegetable oil for 2-3 mins at a time. They should be golden brown.

Limeaide

Ingredients:

-1/2 cup hot water

-1 cup fresh lime juice

-1/2 cup agave

-1 tiny pinch of salt

-5 1/2 cups cold water

-lime wedges

-diced strawberries

-2 cups Sprite

Recipe Instructions:

-Stir together 1/2 cup hot water, 1 cup fresh lime juice, 1/2 cup agave, and 1 tiny pinch of salt until fully combined.

-Add the mixture fo 5 1/2 cups of cold water and stir well. Stir in a handful of lime wedges and a handful of diced strawberries.

-Add in 2 cups of Sprite and stir until combined.

-Chill and serve over ice.

No Bake Cookies

Ingredients:

-2 cups light brown sugar

-4 TBS cocoa

-1/4 cup salted butter

-1/2 cup almond milk

-1/2 cup peanut butter

-1 tsp vanilla

-3 cups oatmeal

Recipe Ingredients:

-In a pot, add 2 cups of light brown sugar, 4 TBS cocoa, 1/4 cup salted butter, and 1/2 cup almond milk. Stire and bring to a boil.

-Once boiling, immediately remove from heat and add in 1/2 peanut butter, 1 tsp vanilla, and 3 cups oatmeal. Stir until fully combined.

-Transfer to pan and allow to cool.

-Cut into cookies.

Chocolate Chip Cookies

Ingredients:

-2 sticks of salted butter, softened

-1 cup white sugar

-1 cup light brown sugar

-2 tsp vanilla extract

-2 large eggs

-3 cups flour

-1 1/8 tsp baking soda

-1 tsp salt

-2 cups of chocolate chips (or white chocolate chips, or half chocolate and half white chocolate – up to you!)

Recipe Instructions

-Preheat oven to 375 degrees.

-In a bowl, mix 3 cups flour, 1 1/8 tsp baking soda, 1 tsp salt, and set aside.

-In another bowl, cream together 2 sticks of salted butter, 1 cup of light brown sugar, and 1 cup of white sugar. Beat in 2 eggs and 2 tsp of vanilla into the wet mixture until fluffy.

-Mix the dry ingredients into the wet mixture until combined.

-Add in 2 cups of chocolate chips and mix well.

-Roll out cookies into balls on pans lined with parchment paper.

-Bake for 8-10 mins at 375 degrees. Let cool on the pan for 2 mins and then move to cooling rack to cool completely.

This is such a big recipe, that when I make it I usually save half of the dough in the fridge for later baking.

Pizza Dough Recipe

Ingredients:

-2 1/3 cups flour

-2 1/4 tsp instant yeast

-1 1/2 tsp white sugar

-3/4 tsp salt

-1 dash of garlic powder (to taste)

-2 TBS olive oil

-3/4 cup warm water

Recipe Instructions:

-Preheat oven to 425 degrees.

-In a large bowl, mix together 1 cup flour, 2 1/4 tsp instant yeast, 1 1/2 tsp white sugar, and 3/4 tsp salt. Add in 1 dash of garlic powder (optional, but delicious).

-Add 2 TBS olive oil and 3/4 cups warm water. Stir until smooth.

-Gradual add in 1 1/3 cup flour and stir until dough forms a ball and sticks to the sides of the bowl.

-In another bowl, coat the sides of the bowl with olive oil. Put the ball of pizza dough in this bowl and roll it around so that the olive oil covers the ball of dough.

-Cover the bowl in a warm place and let rest for about 30 mins. The stove above the preheating oven is usually a good place.

-Once the dough is done rising for 30 mins, knead the dough. Bake at about 25-30 mins.

Banana Bread

Ingredients:

-1/4 cup unsalted butter

-1/2 cup light brown sugar

-1 egg

-1 crushed overripe banana

-3/4 cup flour

-1/2 tsp baking soda

-1/4 tsp salt

-1/4 tsp vanilla

-1/2 cup walnuts (optional)

Instructions:

-Preheat oven to 350 degrees.

-Cream together 1/4 cup unsalted butter and 1/2 cup light brown sugar.

-Add in 1 egg and 1 crushed overripe banana and mix until combined.

-Add in 3/4 cup flour, 1/2 tsp baking soda, 1/4 tsp salt, and 1/4 tsp vanilla. Add in half a cup of walnuts (optional) and mix until fully combined.

-Spread batter in a well-greased pan and bake for about 20 mins at 350 degrees. Check if done by stabbing with a knife and making sure it comes out clean.

Caramel Apple Cookies

Ingredients:

-1/2 cup unsalted butter

-1/2 cup light brown sugar

-1/4 cup white sugar

-1 egg

-1tsp vanilla

-1/2 tsp baking soda

-1 1/3 cups flour

-1/2 cup graham cracker crumbs

-1/2 tsp nutmeg

-1/2 tsp cinnamon

-1/4 tsp salt

-1 bag chewy caramel candies

-1/2 cup finely chopped apples

Recipe Instructions:

-Preheat the oven to 350 degrees.

-Cream together 1/2 cup unsalted butter, 1/2 cup light brown sugar, 1/4 cup white sugar until fluffy. Then mix in 1 egg and 1 tsp vanilla.

-In another bowl, stir together 1 1/3 cup flour, 1/2 cup graham cracker crumbs, 1/2 tsp baking soda, 1/4 tsp salt, 1/2 tsp cinnamon, and 1/2 tsp nutmeg.

-Slowly add dry mixture to wet mixture and slowly beat until just combined.

-Stir in 1/2 cup finely chopped apples.

-Refrigerate dough for 30 mins.

-Scoop into 20-24 even dough balls and bake for 10 mins at 350 degrees. Cut 10-12 chewy caramel candies in half.

-After 10 mins, take cookies out of the oven and place the chewy caramel candies on top of each of the cookies like a thumbprint cookie. Careful! The cookies will be hot.

-Place the cookies back in the oven for another 2-3 minutes to finish baking and melt the caramel.

-Let the cookies cool on the baking sheet for about 2 mins, then move to a cooling rack to cool completely.
