Jam Thumbprint Cookies

I got this recipe from The Food Network and they are literally addicting. Below is the recipe with a few adjustments.

Thumbprint Cookie Ingredients:

  • 1 3/4 cups flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cups unsalted butter, softened (1 1/2 sticks)
  • 2/3 cups sugar, plus more for rolling
  • 1 egg
  • 1 tsp vanilla
  • 1 jar of strawberry jam (or whatever flavor)

Thumbprint Cookie Recipe:

  • Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper
  • In a bowl, whisk together 1 3/4 cups flour, 1/4 tsp baking soda, and 1/2 tsp salt
  • In another bowl, cream the 1 1/2 sticks butter and 2/3 cups sugar until fluffy
  • Beat the egg and 1 tsp vanilla into the butter and sugar mixture until just combined
  • Thoroughly combine the wet and dry ingredients
  • Scoop the dough into 1-inch balls and roll in sugar
  • Space the cookie balls about 2 inches apart on the lined baking sheet
  • Make a thumbprint in each cookie, about 1/3 the way down
  • Fill each cookie with 1/2 tsp jam
  • Bake at 350 degrees F for 15 mins
  • Allow to cool

Lemon Bars

Here is a recipe from Taste of Home on how to make lemon bars. I re-wrote the recipe the way I like to follow it.

Lemon Bar Crust Ingredients:

  • 1 cup flour
  • 1/2 cup softened butter
  • 1/4 cup confectioners’ sugar

Lemon Bar Filling Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 2 TBS flour
  • 1/4 tsp baking soda
  • Juice of a whole lemon (or 2 TBS, whatever is more)
  • Zest of a whole lemon
  • Confectioners’ sugar for sprinkling

Lemon Bar Recipe:

  • Preheat oven to 350 degrees F
  • In a bowl, combine 1 cup flour and 1/4 cup confectioners’ sugar
  • Dice up the 1/2 cup softened butter and rug the butter into the mixture until crumbs form
  • Pat into an un-greased pan
  • Bake at 350 degrees F for 20 mins
  • While that bakes, get started on the filling
  • Beat 2 eggs in a bowl
  • Then add 1 cup sugar, 2 TBS flour, 1/4 tsp baking soda, juice of one lemon, and zest of one lemon and beat until frothy
  • Pour over crust and bake at 350 degrees F for another 25 mins, or until light golden brown (shouldn’t wobble too much)
  • Once cool, dust with confectioners’ sugar

Recipe: Chocolate Cake with Peanut Butter Frosting

Cake Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 6 TBS cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup veggie oil
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup boiling water

Cake Recipe:

  • Preheat oven to 350 degrees F and grease and flour a pan
  • In a large bowl, combine 1 cup flour, 1 cup sugar, 6 TBS cocoa powder, 1 tsp baking soda, and 1/2 tsp salt
  • Add in 1/2 cup milk, 1/4 cup veggie oil, 1 egg, and 1 tsp vanilla
  • Combine well
  • Carefully add 1/2 cup boiling water (while stirring) and mix until well-combined
  • Bake at 350 degrees F for 30-35 mins

Peanut Butter Frosting Ingredients:

  • 1/2 cup room-temp butter
  • 1/2 cup peanut butter
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 TBS milk

Peanut Butter Frosting Recipe:

  • Beat 1/2 cup butter and 1/2 cup peanut butter until creamy
  • Add in 1 1/2 cups of powder sugar a spoonful at a time while beating until fluffy
  • Beat in 1/2 tsp vanilla extract and 1/4 tsp salt
  • Beat in 1 TBS milk
  • Spread on a cake

Do I extinguish you
