Banana Nut Cookies

Ingredients

-1/2 cup salted butter, softened

-1 cup light brown sugar

-1 egg

-1-2 overripe bananas

-1 tsp baking soda

-2 cups flour

-1 pinch of salt

-1 tsp cinnamon

-1 tsp nutmeg

-1 cup of chopped walnuts

Recipe Instructions:

-Preheat oven to 350 degrees.

-Beat together 1/2 cup butter and 1 cup light brown sugar.

-Add 1 egg to mixture and beat until fluffy.

-In a separate bowl, mix together 1-2 crushed bananas with 1 tsp baking soda and let sit for 2 mins.

-Mix banana mixture into butter mixture.

-In another separate bowl, mix together 2 cups flour, 1 pinch of salt, 1 tsp nutmeg, and 1 tsp cinnamon.

-Combine wet and dry mixture.

-Fold in 1 cup of chopped walnuts.

-Scoop cookie batter onto a pan lined with parchment paper.

-Bake cookies at 350 degrees for 11-13 mins.

Hushpuppies

Ingredients:

-1 cup cornmeal

-1/4 cup flour

-1/2 tsp baking soda

-1/2 tsp salt

-1 egg

-3/4 cup almond milk

-1 small onion

-Vegetable oil for frying

Recipe Instructions:

-Combine 1 cup cornmeal, 1/4 cup flour, 1/2 tsp baking soda, and 1/2 tsp salt.

-Whisk together 1 egg, 3/4 cup almond flour, and 1 small onion.

-Stir together wet and dry ingredients until combined.

-Fry spoonfuls of the mixture in vegetable oil for 2-3 mins at a time. They should be golden brown.

Limeaide

Ingredients:

-1/2 cup hot water

-1 cup fresh lime juice

-1/2 cup agave

-1 tiny pinch of salt

-5 1/2 cups cold water

-lime wedges

-diced strawberries

-2 cups Sprite

Recipe Instructions:

-Stir together 1/2 cup hot water, 1 cup fresh lime juice, 1/2 cup agave, and 1 tiny pinch of salt until fully combined.

-Add the mixture fo 5 1/2 cups of cold water and stir well. Stir in a handful of lime wedges and a handful of diced strawberries.

-Add in 2 cups of Sprite and stir until combined.

-Chill and serve over ice.

mothers and daughters: a poem

if you’re a woman who says it’s easier
 to have daughters than sons
 let me ask you something
  
 is it easier to teach a woman how not to be raped
 than to teach a man
 how to not rape?
  
 I suppose the most difficult medicine to swallow
 is one’s own pride
 and it doesn’t help
 if the rest of the world won’t help you
  
 and either way
 the loss of innocence is difficult to grieve
 but one of those situations
 only acknowledges one’s loss of innocence
  
 some mothers care more about their own healing
 than the healing of their daughters
 but in the end it feels like there’s nothing to fix
 if you can’t see what’s broken
  
 if you’re a woman who says it’s easier
 to have daughters than sons
 I hate you
 but probably not as much as you hate yourself

No Bake Cookies

Ingredients:

-2 cups light brown sugar

-4 TBS cocoa

-1/4 cup salted butter

-1/2 cup almond milk

-1/2 cup peanut butter

-1 tsp vanilla

-3 cups oatmeal

Recipe Ingredients:

-In a pot, add 2 cups of light brown sugar, 4 TBS cocoa, 1/4 cup salted butter, and 1/2 cup almond milk. Stire and bring to a boil.

-Once boiling, immediately remove from heat and add in 1/2 peanut butter, 1 tsp vanilla, and 3 cups oatmeal. Stir until fully combined.

-Transfer to pan and allow to cool.

-Cut into cookies.

Chocolate Chip Cookies

Ingredients:

-2 sticks of salted butter, softened

-1 cup white sugar

-1 cup light brown sugar

-2 tsp vanilla extract

-2 large eggs

-3 cups flour

-1 1/8 tsp baking soda

-1 tsp salt

-2 cups of chocolate chips (or white chocolate chips, or half chocolate and half white chocolate – up to you!)

Recipe Instructions

-Preheat oven to 375 degrees.

-In a bowl, mix 3 cups flour, 1 1/8 tsp baking soda, 1 tsp salt, and set aside.

-In another bowl, cream together 2 sticks of salted butter, 1 cup of light brown sugar, and 1 cup of white sugar. Beat in 2 eggs and 2 tsp of vanilla into the wet mixture until fluffy.

-Mix the dry ingredients into the wet mixture until combined.

-Add in 2 cups of chocolate chips and mix well.

-Roll out cookies into balls on pans lined with parchment paper.

-Bake for 8-10 mins at 375 degrees. Let cool on the pan for 2 mins and then move to cooling rack to cool completely.

This is such a big recipe, that when I make it I usually save half of the dough in the fridge for later baking.
